Ginger is popular in American food, but it’s practically a staple in Asian cuisine. Not only is it easy to grow and delicious in recipes, but studies show that ginger packs powerful health benefits. Although it is a tropical plant, it will adapt easily to indoor and container planting, making it possible for anyone to enjoy fresh ginger throughout much of the year. Here’s what you need to know to bring this favorite into your own kitchen.

Before You Plant


Choose the Right Type of Ginger:

  • For practical purposes, ginger is most often home-grown from tubers. Your local grocery store is the best place to find ginger root to propagate.
  • The most popular kind of ginger is basic ginger root (Zingiber officinale). It is commonly used in America for cookies, breads, and Ginger ales, while Asian recipes include ginger in savory dishes.
  • Choose a tuber that looks healthy and plump. It should be firm with several fingers or growing buds. Avoid dry or damaged pieces.
  • Not all gingers are considered edible, some types are instead prized for the plants and flowers.

Find a Suitable Place:

  • Plan to grow ginger indoors unless you live in the extreme southern portions of the U.S. or in one of the desert states. Growers in zone 10 or higher will have the most success outdoors.
  • Provide your ginger with a generous amount of room. Containers should be fully twice the size of the tuber. To plant more than one tuber in a single container, get one that is 14″-16″ in diameter and 12″ deep.
  • Outdoors, choose a spot with light shade and well-drained soil.
  • Protect plants from high winds.

Prepare the soil:

  • Mix organic material or prepared compost into soil to fill the container (or amend garden soil in the same manner).
  • Ginger will grow quite well in commercially prepared potting soil.

Planting/Growing Ginger


What You Will Need:

  • Ginger root
  • Prepared soil

How to Plant Ginger:

  1. Ginger should not be placed outdoors until daytime temperatures exceed 75 degrees.
  2. Soak tubers overnight in water before planting.
  3. Fill containers with prepared soil, or loosen the dirt in your garden location.
  4. Place ginger in the soil with the buds facing up.
  5. Cover with a very thin layer of soil. (Some growers suggest leaving it uncovered).
  6. Water lightly until the plant becomes established.

Harvesting/Pruning Ginger


Ginger requires very little maintenance. Here’s what you need to do.

What You Will Need:

  • Garden clippers or scissors
  • Small garden trowel

Steps for Care and Maintenance:

  1. Younger ginger plants should remain in the shade.
  2. Water regularly to maintain moist (not wet) soil.
  3. Once the plant matures, clip tender new shoots for cooking at any time.
  4. To harvest ginger root, dig up new tubers that appear at the base of the plant.
  5. Move plants indoors when outdoor temperatures dip below 50 degrees.
  6. Ginger is dormant during the winter months. Allow the plant to dry during this time.

Additional Tips and Advice


  • Roots reach their optimum flavor at 265 days.
  • To store ginger, wash (don’t peel) tubers before placing them in a bag and freezing them. Remove ginger from the freezer and use a vegetable peeler to pare off portions as you need them.
  • Plants will mature in about ten months, reaching heights of 2″-4″.

Chefirul este considerat a fi elixirul tineretii si al sanatatii, iar faina de hrisca are proprietati curative extraordinare. In ceea ce priveste ghimbirul, putem spune ca acesta este un adevarat miracol al naturii, in spcial cand vine vorba despre detoxifiere. Pentru a prepara reteta veti avea nevoie de:

- 1 lingura de faina de hrisca

- 1/4 de lingurita de ghimbir praf (puteti pune si proaspat)

- 200 de ml de chefir

- O lingurita de miere

Preparare:

• Amesteca bine intr-un castron faina de hrisca cu ghimbirul, chefirul si mierea.

• Tine amestecul la frigider peste noapte.

• In dimineata urmatoare, amesteca din nou bine compozitia si remediul este gata.

• Preparatul trebuie consumat in locul micului dejun.

• Nu consuma alte alimente timp de trei ore de la servirea preparatului. 

• Continua sa il folosesti astfel timp de 14 zile, o data la fiecare sase luni, si te vei alege cu un organism curatat si pregatit sa faca fata oricarei provocari inca de la prima utilizare.

Diabeticii pot folosi acest remediu, fara sa adauge miere!

Sos de ardei iute cu usturoi
Oh, Sriracha, ador sriracha. La un moment dat, in ultimul an sau pe acolo, a inlocuit Tobasco ca sosul meu iute preferat. E dulce, e picant, si cu o doza consistenta de usturoi, este mult mai aromat decat sticluta mica cu capacul rosu.
Si cu doar 5 ingrediente, este atat de usor sa-ti faci propriul sos de usturoi cu ardei iute la domiciliu. Proaspat. Si cu mai putin (fara!) guma xantan.
Ardeiul gras rosu ii ofera densitate sosului, precum si dulceata naturala (fara adaos de zahar!). Iar apoi iutimea. Daca nu sunteti amatori de iute, folositi mai putin ardei iuti decat in reteta (reteta originala continea 4 ardei Habanero sau alti ardei iuti rosii sau oranj).
Am folosit ardei iuti Tepin, dupa ce adrasla de 2 ani, a dat peste un mic arbust care crestea salbatic in curtea din spate. “Zmeura doare” au fost primele cuvinte mormaite in cele din urma, dupa cateva minute de plans si salivare de parca avea rabie.
Si pe buna dreptate – ardeiul iute Tepin este foarte iute.
Nebun de iute! Sunt fie aproape la fel de iuti ca ardeii habanero sau la fel de iuti ca ardeii habanero, in functie de site-ul pe care te uiti. Este ardeiul oficial nativ din Texas (distinctia este importanta pentru a nu ofensa jalapeno) si in cea mai mare parte cresc salbatic, deoarece semintele nu vor germina, decat daca trec prin tractul digestiv al unei pasari.
Planta noastra salbatica creste in coltul neglijat al curtii… chiar sub niste cabluri de inalta tensiune.
Deoarece sosul nu are nici un fel de agenti de ingrosare comerciali, textura va semana cu un sos salsa de rosii proaspat facut in casa. Dupa ce aromele se aseaza timp de cateva zile, singura ta problema va fi cum sa combini cate o lingura din acest sos vibrant rosu-oranj cu orice, de la micul dejun la desert :)

Ingrediente

  • 2 ardei grasi, fara codita si curatati de seminte
  • 2-4 ardei iuti, rosi sau oranj (habanero, fresno, etc), fara codita (eu am folosit 8 ardei Tepin)
  • 3/4 cana otet de mere
  • 5 catei de usturoi
  • 1/2 lingurita de sare

Mod de preparare

  • Marunteste grosolan ardeii dulci, cei iuti si usturoiul, pune-i intr-o tigaie mica, adauga otetul si sarea;
  • Odata ce a inceput sa fiarba, redu focul si lasa-l sa fiarba inabusit timp de 10 minute;
  • Nu sta deasupra tigaii, sa inhalezi aburii;
  • Transfera in blender continutul tigaii si amesteca-l ~10 secunde sau pulseaza-l pana ajunge la densitatea dorita;
  • Muta continutul intr-un borcan (borcane) si lasa-l sa se raceasca la temperatura camerei;
  • Acopera borcanele si tine le la frigider cel putin 3 zile, inainte de a le consuma;
  • Sosul va tine saptramani – luni! daca e tinut in frigider.

About the recipe
Fried rice is really comforting and, cooked as here, it’s full of nutrients, too. Brown rice is a complex carbohydrate, meaning that it releases energy slowly. It’s packed with fibre to keep you full, and high in selenium, manganese and antioxidants. Eggs are a must-have for me in any fried rice and they are a good protein source. The veggies provide a host of vitamins and minerals and add some great texture to the dish.

This is an easy everyday dish perfect for sharing, and a smaller portion makes a great accompaniment, too.

Ingredients
40g/1½oz red rice or
Brown rice
160ml/5½fl oz
Cold water
½ tablespoon
Rapeseed oil
1 teaspoon freshly grated peeled root
Ginger
1 small–medium, peeled and finely diced
Carrot
50g/2oz, washed and sliced on an angle
Sugar snap peas
50g/2oz stalks, washed and sliced into 1cm/½ inch pieces
Tenderstem broccoli
75g/3oz frozen, thawed
Edamame beans
1 free-range medium, lightly beaten
Egg
1 teaspoon, tamari or
Low sodium light soy sauce
1 pinch
Ground white pepper
1 teaspoon
Toasted sesame oil
 
How to cook?
  1. Wash the rice in water, rinse until the water runs clear, then drain. Place in a medium pan with the water and bring to the boil.
  2. Place a tight-fitting lid on the pan, turn the heat down to low and cook the rice in its steam for 20–25 minutes until cooked. Fluff up the grains with a fork.
  3. Heat a wok (or pan) over a high heat and add the rapeseed oil. Give it a swirl, then add the ginger and cook for a few seconds. Tip in the carrot and cook, stirring, for 1 minute. Add the sugar snap peas, broccoli and edamame beans and toss for 30 seconds. Then add in the rice.
  4. Make a well in the centre, add the beaten egg and toss for 1 minute. Season with the soy sauce or tamari, white pepper and sesame oil. Take off the heat and serve immediately.
