Dutch Oven No-Knead Herb Bread

“Tap tap tap”, Luise leans forward and puts her ear closer to the bread crust. “Yep, this one is also good”. It’s her third bread today. All with different flours, but with the exact same baking technique. Earlier this week she found Mark Bittman’s 6-year old New York Post article on Jim Lahey’s no-knead bread. Although the recipe has been circulating for quite a while, we couldn’t resist making our own version of it, using more wholesome flours.
Baking isn’t normally our strongest area, so when we succeed with three breads in one day, it must be a fail-free technique. We love sourdough bread, but ever since our sourdough starter tragically past away, we gave up the thought of making our own again. This recipe has however the flavor and texture of a sourdough without the need of a starter. This is thanks to the long fermenting process. The fermenting also spares you from kneading it, time does all the work. One trick to succeed is to get the pot really hot. So when you add the wet dough, it’ll create a moist and steamy environment that gives the bread that perfect crust.
We ate several slices hot from the oven, with just a slab of butter on them. So damn good.
As it got closer to dinner time we started talking about the bag of chanterelles that we had lying around.
Chanterelles are very popular here in Sweden during August and September. Almost everyone I know has their own secret spot in the forest where they claim chanterelles grow like a yellow carpet. We don’t have any secret places like that. So when we can’t tag along some of our friends, we just go and buy a large bag of them at the market. One of the simplest yet most delicious way to eat chanterelles is stir-fried on a sandwich. So for dinner, we combined that Swedish chanterelle sandwich with a recipe for an Italian bean bruschetta that we sometimes make. The result was great. The beans added creaminess and tanginess and made it more into a dinner than just a sandwich. So, next time you feel like making a bruschetta, skip the tomatoes and try this bean and mushroom combo instead. We have included the recipes for both the bread and the bruschetta here. Happy weekend!
The spelt dough after 15 hours of fermentation.
Dutch Oven No-Knead Herb Bread
1 big bread
We have played around with rye flour, spelt flour, kamut flour, whole wheat flour and it doesn’t seem to changes the amounts of flour much, so choose your favorite flour and give it a try.
2 1/2 cups lukewarm water
3 g fresh yeast (the size of a pea) or 1/4 tsp dried yeast
2 tsp sea salt
1 tsp unpasteurized honey
1 handful fresh herbs or kale, very finely chopped
2 3/4 cups (400 g) whole spelt flour
2 cups (300 g) light spelt flour
extra flour for folding
1 oven proof dutch oven, cast iron or ceramic pot
Place water in a large mixing bowl. Solve the yeast into it by stirring with a spoon or your hand. Add salt, honey, herbs and kale and stir until well mixed. Sift the flours and add to the water mixture. Mix together until all is combined, yes it will look kind of loose and messy and not as pretty as a traditional bread dough, but that is normal. Cover with plastic wrap, set aside to ferment in room temperature for 12-15 hours.
When you unwrap the bowl, the dough is bubbly and sticky. Prepare your work surface, flour the kitchen counter and a kitchen towel (you’ll use that later). Pour the dough out on the flour covered surface and dust the dough with flour or it will be to sticky to handle. Then fold it 4 times. Take the first side and fold it onto the middle of the dough. Repeat this for the opposing side, then do the same thing to the top and bottom. Now place the folded dough on the flour dusted kitchen towel with the folded sides down. Fold the kitchen towel over the dough and let rise for 2-3 hours (in room temperature). When there is about 40 minutes left of the rising time, turn on the oven to 500F (250°C) and place the dutch oven (no greasing needed) with the lid on in the oven. When the oven is ready, the dutch oven is smokin’ hot and the dough is done rising. Carefully remove the dutch oven from the hot oven, using oven gloves. Unwrap the dough and place/drop it in the dutch oven. Slash the dough with a knife, then cover with the lid and place it back in the hot oven. Bake for 30 minutes, then lower the to 445F (230°C), remove the lid and bake for another 15 minutes. Remove it from the oven, let cool slightly, turn the dutch oven upside down and place the bread on an oven rack to cool.
Chanterelle & Black-Eyed Bean Bruschetta
1 cup cooked black-eyed beans, rinsed
1/4 cup pickled capers, drained
1 celery stalk and leafy top, really thinly sliced
10 fresh basil leaves
1/2 lemon, juice
2 tbsp extra virgin olive oil
a pinch of sea salt and freshly ground black pepper
4 slices of bread
200 g fresh chanterelle or wild mushroom of choice
2 cloves garlic, peeled
Combine beans, capers, celery, basil, lemon juice, olive oil, salt and pepper in a medium size bowl. Set aside to let the flavors infuse.
Cut 4 thick slices of bread. Set a chargrill pan on high heat (without oil) and grill the bread slices for a few minutes on each side until grill marks appear.
Heat a few tablespoons of ghee, olive oil or coconut oil in a large frying pan on medium-high heat. Add chanterelles, salt and black pepper, and let stir-fry for 5-6 minutes tossing a few times.
Assembling: Rub each slice of grilled bread with a garlic clove. Spoon the bean mixture onto the slices and top with chanterelles and a fresh basil leaf. Add extra olive oil if needed. Serve warm.

Whole Spelt Sourdough

When you think of 100% whole grain spelt bread, what images come to mind? Bland 1970’s era health food? What people with dietary restrictions must resort to? Lots of hard and challenging work? A door stop?
Those were largely my impressions until I found this spelt bread recipe to be as delicious and easy to make as it is nutritious. So when the inspiration strikes to get virtuous with your eating habits without sacrificing sensory pleasure, give this one a whirl. You’ll enjoy that flaky, buttery croissant all the more when you rotate this spelt recipe through your bread baking line-up now and then.

A bit about spelt: Spelt is an ancient variety of wheat with its roots in the Fertile Crescent some 9000 years ago. It is more widely used in Europe where it’s known as dinkel in Germany and farro in Italy. While higher in protein than commonly used wheat varieties, the nature of its proteins results in less gluten formation when making bread dough. Spelt is renowned for its health benefits. Many people with wheat allergies or sensitivities can enjoy bread made with spelt flour. What really helped make a fan out of me, however, is the mellow nutty flavor that spelt delivers. Read more about the Wonders of Spelt.
.
The Ingredients:
530 grams (about 5 cups well fluffed up) whole spelt flour
350 grams (~1+1/2 cups) water
10 grams (1+1/2 tsp) salt
3 Tbs honey or sugar or 2 Tbs agave
1/4 cup sourdough starter
Follow the instructions in the video.
Bake at 450 for 45 minutes or until internal temp is 195-200.
Whole Grain Spelt
Spelt/Kamut Variation
Miscellaneous Notes: I’ve baked this bread several times since making the video and have found a few things you can vary in order to adapt the recipe to your time schedule.
Spacing the stretch and folds out by as little as 10-15 minute works just as well as the 30-60 minutes mentioned in the video. Three or four stretch and folds at 15 minute intervals seems pretty optimal.
Most of the time I mix up the dough in the evening, let it sit out overnight, and bake it the next morning. But I’ve also mixed up the dough in the morning and then immediately refrigerated the dough in a covered bowl until just before bed time. I then took it out to proof at room temperature until morning. This worked very well too.
You could probably also leave the dough in the fridge for up to a two or three days until you’re ready to bake. Since the dough continues to proof in the fridge (just very slowly), you’ll want to be careful not to let the dough sit out too long after removing from the fridge or it may over-proof. Since I haven’t tried this yet, you’ll have to take a good guess on the timing and let us know your experience.
Another relatively minor thing I’m doing differently now than when I shot the video, is I’m leaving the lid on the baker for the entire 45 minutes. I find the crust gets plenty brown and crusty this way.
Wheat Berries
Wheat Berries
Recipe Variations: There are, of course, endless ways to vary the recipe. A mix of spelt and kamut flour also produced an excellent loaf. Kamut is another ancient variety of wheat known for its nutritional value and naturally sweet and nutty flavor. The “official” kamut web site has some very interesting information.
Kamut flour has different moisture absorbtion properties than spelt, so if you’re playing around with different combinations of grains, you’ll also have to adjust the amount of water used. The following worked well:
300 grams spelt flour
230 grams kamut flour
360 grams water
Same as video for everything else.
August 2011 Update: Thanks Brent for this Spelt Bread Recipe variation and how to make it into sandwich loaves. Great picture too!
"I loved this recipe, and since my wife prefers spelt over wheat, I decided to try tweaking it for our everyday sandwich loaf. I’ve been around on it a few times and think I’ve come up with something pretty good as an adaptation of Eric’s wonderful hearth loaf formula:
For each loaf:
Dry ingredients
530 g spelt flour 100%
10 g salt 1.9%
1 T. Vital Wheat Gluten (this could be omitted for people with wheat gluten problems, but I find it helps the rise)
1-2 T each sunflower seeds, sesame seeds and flax seeds
Wet ingredients
350 g water 66%
3T (64 g) honey or molasses, or a mix 12%
1/4 c. starter (I have a spelt starter @100% hydration)
(I sometimes augment this with a pinch or two of commercial yeast)
I mix this in two-loaf batches and do 4 stretch-and-folds before putting the dough in the refrigerator for the night. In the morning I degas the dough a bit more (to get fewer big holes) as I form the loaves, place them in 4.5 x 8.5 inch loaf pans, cover and let rise until they’re 1.5 times their original size (this can take as long as six hours on some days). I score the loaves lengthwise (which you can see in the picture), then bake 1 hr. at 375° F to an internal temperature of 200°. My family loves the flavor and texture of this bread, and with the seeds it’s a little homage to Dave’s Killer Bread, which is made here in Portland, Oregon. :-)
As you can see from my photographer daughter’s picture, we couldn’t quite wait the full hour before cutting into this loaf, but it should give you an idea of the crumb."
Thanks, Eric, for this terrific bread recipe!

Feb 2012 Update: Check out Phil Dellinger’s post for Dutch Crunch topping.
  1. Phil Dellinger
Here is my first loaf of Spelt Sourdough Bread with Dutch Crunch topping. It tastes as good as it looks. The Dutch Crunch could have been made a little thinner with a touch more water as it slowed up the “oven spring” just a little bit.
Topping recipe (from the Bread Bible)
    1 tbsp active dry yeast
    ½ cup warm water (105-110F)
    1 tbsp sugar
    1 tbsp vegetable oil
    ¼ tsp salt
¾ cup white rice flour (not sweet rice flour
Combine all topping ingredients in a medium bowl and mix very well. Let stand for 15 minutes.
When bread has risen a bit and the topping is ready, spread a generous layer of topping mixture on the bread. Let rise for another 20 minutes before baking. Bake bread following video instructions. If using a La Cloche Clay Baker, remove lid for the last 15 minutes of cooking time to brown the topping.

Grâu spelta, rudă neprețuită cu grâul comun

sursa: http://diversificare.ro/alimente/2013/03/grau-spelta-ruda-nepretuita-cu-graul-comun/

– scade aciditatea organismului, fiind bazic

Graul spelta – cereala magica

sursa: http://vegis.ro/graul-spelta-cereala-magica-1355756317968-311.html

Graul spelta – cereala magica
In Europa s-a semnalat utilizarea acestei tip de grau in jurul anului 1900 i. Chr.
In ceea ce priveste vechimea agriculturii pe teritoriul Romaniei cu aceasta cereala, sapaturile arheologice facute la Portile de Fier au aratat ca Triticum spelta era prezent aici inca de acum 10000 ani in urma.

Beneficiile graului spelta

Pesto: Nut-free and Fermented + 3 Recipes

Ahhhh, pesto. It’s so simple, yet adds such complexity to hot or cold dishes. It has so few ingredients and takes so little time to make. In the case of this pesto, it’s nut-free and also packs a powerful probiotic punch.
Nuts in general, but especially pine nuts — the type traditionally used for pesto — are really expensive. Just one cup of organic pine nuts is going to set you back at least $10! I don’t know about you, but I can’t spend that kind of money on pine nuts! Some allergy-free recipes call for walnuts instead of pine nuts, but walnuts are also pricey. Besides, there are lots of people can’t have nuts at all. No one should have to live a life without pesto! ;)
Now, you probably noticed that this is a fermented recipe, and while you may think this is for probiotic purposes, it’s actually more for preservation. Most of the time, pesto is mixed into hot pasta, which may lessen the potency of the probiotics anyway. But because pesto has a tendency to spoil rather quickly, adding some beneficial bacteria to the mix really helps keep it fresh longer.
I’d say this pesto will last four to six weeks in your fridge. Also, if you find you have basil coming out your ears during peak gardening season, pesto is an easy way to preserve your harvest. Off the plant, basil doesn’t last very long, and after a year or so you may find that you simply can’t freeze or dry it anymore. The answer? Pesto, of course!

Since Wardee is rocking it with her Allergy Free Cooking eCourse, here’s a recipe all you nut-free folks can add to your repertoires.

Pesto Recipe

  • 2 cups packed basil leaves, preferably organic
  • 1 cup grated Parmesan cheese (not powdered)
  • 3 cloves garlic
  • 1/4 cup lemon juice (approximately 1 lemon)
  • 1/2 cup extra virgin olive oil
  • salt and pepper to taste
  • 2 tablespoons liquid whey or veggie starter culture
Start by separating the basil leaves from the stems, washing them, and packing all of the leaves into a measuring cup. Add them to a food processor or high-powered blender (I used my Blendtec). Next add the cheese, garlic, lemon juice, salt, pepper, and whey. With the blender on low, drizzle the olive oil in slowly. You may need to scrape down the sides a couple of times until it really gets going. Process until smooth and taste. Add more salt, pepper, or any of the other ingredients, if necessary. Transfer to a clean glass jar and close. Leave on your counter or other warm place (out of direct sunlight) for 4 to 6 hours, then refrigerate.

Here’s how easy it is to use pesto: Boil water. Add pasta. Cook. Drain. Add pesto. Stir. Eat. Repeat if needed. If you want to get a little crazy with your pesto use, here are a few ideas that are a little more out-of-the-box.

Grown-Up Grilled Cheese

Take 2 slices of sprouted or sourdough bread — the good, thick kind that stands up to being cooked in a skillet. Slather one side of each slice with some yummy salted butter. Then spread pesto on one or both of the other sides of each slice. Place in a skillet and add sliced mozzarella, fontina, and gouda cheeses to the bread. Toast well on both sides, until cheese is melted.

Pesto Pasta Salad

Cook pasta, such as penne or elbow macaroni, according to package directions. Drain and add a few tablespoons pesto, some sliced olives, sun-dried tomatoes, capers, feta or Parmesan cheese, sliced pepperoncinis, and cubed pepperoni, salami, or chicken. Refrigerate and serve cold.

Italian Quesadilla

Spread butter on one side of sprouted or sourdough tortillas. Spread pesto on the other side. Add mozzarella cheese and other fillings of choice, such as nitrate-free Italian sausage, pepperoni, or hard salami, sliced tomatoes, red onions, mushrooms, bell peppers…get creative! Cook in a medium-high skillet until tortillas are browned and cheese is melted. Cut into wedges and serve with hot, homemade marinara sauce for dipping.

How to Make a Spring Pesto

There’s nothing quite like a good pesto: Fresh, vibrant, green, with just enough richness (thanks, cheese and nuts!) to keep things from feeling austere. We slather it on bread, sauce our pasta with it, and use it as a dip for veggies. While we happily make due with winter’s heartier greens, we’re thrilled to be shedding our heavy jackets and trading in fresh, tender greens for last season’s kale and collards.

There aren’t many rules to making pesto, but they are important ones. First, the greens should be fresh and rinsed clean—nobody likes a sandy sauce. Using perky, not-wilted greens ensure that your pesto will be smooth, not gummy.
As for what greens to use, the sky’s really the limit. If you can eat it in a salad, you can pesto it. Okay, well, except for actual lettuce. That’s a littletoo delicate to purée; stick with sturdier greens, like peppery watercress. Let the season’s bounty be your guide. The flavors of spring are delicate (tender fresh herbs, like parsley and tarragon); grassy, like spinach; and funky-oniony, like garlicky ramps and chives. Tempering the more intense alliums with another green can help stretch the batch and make it more palatable. Chives and parsley go together particularly well.
Spring’s most compostable ingredients are also pesto-perfect: Well-rinsedcarrot tops and radish tops cut down on waste and blend together well. Don’t forget about peas, which are particularly good this time of year. Lastly, lemony sorrel is a great pick for sauce. It’s astringent and juicy, and can stand up to stronger ingredients, like red chile flakes and mint.
To keep the color of the sauce bright, you can blanch and shock the hardier greens, like chard and ramp tops. The quick boil will take the edge off, and the subsequent dunk in ice water will stop the cooking process and keep things verdant.

Second, pesto begs for something fatty to round out the greens. Traditional basil pesto calls for pine nuts and shredded Parm, but feel free to mix it up. Walnuts, almonds, and sunflower seeds are all great options. Our carrot top pesto recipe even uses macadamia nuts. Just be sure to dry-toast them in a skillet or in an oven, and wait for them to cool completely before pulverizing in the food processor. You can choose any cheese you’d like, but we’re big fans of harder, aged cheeses that impart a salty, funky note. Coarsley grate the cheese, and add it to the pesto once it’s almost done processing, so it doesn’t get too obliterated by the machine’s blades. Don’t forget the salt and pepper.
The last rule of spring pestos is an unofficial one, but every bit as important: Whenever possible, consume with a glass (or two) of rosé. ‘Tis the season, after all.
