Has anyone made dosa/idli batter? Have you got tips or a good recipe?

Jess Carey I ferment a cup and a half of green lentils, a cup of fermented rice, and let both sit for two days. Then I blend them together and add oil and spices. Let it sit for another day, and it’s awesome. It is a Rodale recipe.

Becca Reilly i do 2:1 rice to lentils, let them soak for 1-2 days, then rinse like crazy until the water runs clear. Usually takes about 10 mins. Then blend with some yogurt, thin with a bit of water if it's too thick to blend smooth. Then pour into a bowl, cover with a cloth and let rise, can be a day or several days depending on the temp.

Becca Reilly Well, after its puffed up in the bowl, then I scoop some out, add spices and a bit of water to thin it, and fry like a pancake. So at this point its cooked, but not before that. I find it's important to grind the rice very smooth after its soaked in the first step.

I CUP OF RICE
1/4 CUP LENTILS with 1/2 Teaspoon fenugreek

Let them sit each in PLENTY of water for 24hrs, apart. Drain. Blend them each separated, (as they have different consistencies. rice will take longer) both to a creamy paste. Mix them together in a bowl, and stirr them until fully mixed. Cover with a wet cloth and let it ferment overnight, (or more if you fancy more of a sour.taste!) Once ready to use add a little bit of water and SALT, just to get a panckage batter sort of thickness. Heat a cast iron skillet, andd some ghee, oil, or butter, add the mixture, cook till opac, turn till you see bubbles and ready!
